Description
This set contains a 18cm (7”) Santoku knife and an 13cm (5.2”) Shotoh, or petty, knife. This latter knife is ideal for the preparation of smaller cuts of meat and fruit and vegetables. Santoku translates as “Three Virtues”, these being meat, fish and vegetables. The flat cutting edge lends itself to a chopping motion rather than the rocking cutting movement of European chef’s knives.
Combining the traditions and craftsmanship of Japanese sword makers with the excellence of German engineering this exquisite set of Japanese knives is a symbiosis of elegant design, latest technology and centuries-old knife-making art.
Miaybi 5000MCD blades are formed of a MicroCarbide MC63 powder steel core surrounded by 100 layers of two different types of steel with different levels of hardness. MicroCarbide MC63 powder steel is high-grade steel for the highest demands. A special blade treatment alters the surface structure of each layer, giving each blade its individual floral damask pattern.
The CRYODUR® blade is hardened using a specially developed ice-hardening process; -196°C that guarantees extreme hardness of 63 Rockwell and a lasting sharp blade.
Razor-like sharpness is achieved by a three-stage grinding, sharpening and polishing process called Honbazuke honing. The entire length of the cutting edge can be used as there is no finger guard.
Each handle made of top-quality Masur birch is also unique. The structure of the wood handle is reflected through the interplay of lines and stripes. The warmth of the natural wood contrasts nicely with the steel blade. A mosaic pin finishes off the sophisticated look.
For best care, wash by hand, and maintain and sharpen using whetstones. We’d recommend using a wooden chopping board as opposed to glass, ceramic, plastic or stone boards as these will dull the cutting edge.
