Description
Every knife in the I.O.Shen Mastergrade range uses the very latest technology to construct a blade that is amazingly sharp and at a hardness of 62 HRC will retain a very sharp edge for a phenomenal amount of time. They have been hand sharpened to a 15° angle, which allows for effortless slicing and portion control. The unique handle design distinguishes I.O.Shen from any other knife. The full tang construction of these knives provides excellent strength, balance and precision control.
Designed to balance perfectly in the cook’s hand, this deep-bladed I.O.Shen Maoui Deba Knife was developed for I.O.Shen by Yorkshire chef Karim Maoui to be the sort of knife that chefs never put down and has been described by the Two Michelin Star chef, Daniel Clifford, as “a dream in the hand”.
Deba knives were traditionally used in Japan for filleting fish, but this deep, well-balanced blade is a multi-functional knife that you’ll find yourself using for a multitude of tasks. Unlike a traditional Deba, this blade is sharpened on both sides to suit Western chefs.

- The I.O.Shen 170mm Maoui Deba Knife was designed by Chef Karim Maoui, this multi-purpose blade features a strong curve to the edge leading to an arrow head point. This superb knife has an outer layer of softer, protective steel (Rockwell10°) around the central core of HRC62 steel (Rockwell 62°).
- Triplex Technology developed by I.O.Shen is made up of three layers of steel, a central, extra hard layer sandwiched by two softer layers.
- The extremely hard central layer of Japanese steel provides an exceptionally sharp edge while outer layers provide protection and shock absorption.
- Blades retain edge sharpness.
