Every knife in the I.O.Shen Mastergrade range uses the very latest technology to construct a blade that is amazingly sharp and at a hardness of 62 HRC will retain a very sharp edge for a phenomenal amount of time. They have been hand sharpened to a 15° angle, which allows for effortless slicing and portion control. The unique handle design distinguishes I.O.Shen from any other knife. The full tang construction of these knives provides excellent strength, balance and precision control.
A very well designed and balanced knife, longer blades – fit for larger hands. Easy for slicing fruits, vegetables and meats.
Triplex technology – I.O. Shen has overcome the brittleness of hard steel, using a layer of super hard steel ERDON 62°, sandwiched between two layers of softer ERDON 10° steel to produce the ultimate cutting edge.
Using the latest technology, it is not only amazingly sharp but will retain the edge sharpness for a phenomenal amount of time.
Handcrafted in average 7 hours by our knife’s master attained to 15° angle edge, mirror finished cutting edge, hand polished.
The Tai Tang handle is not just an embellishment but it is actually an integral part of the handle frame (the Tang).
The handles made with ebonite which is durable and heat resistant. (no dishwasher cleaning please).
